Just read the article on Wikipedia on “American cheese”..
It doesn’t really seem like a type of cheese, indeed rather being a quality grade, of cheddar in fact.
Maybe you could add “sliced cheese” or just “processed cheese” as a substitute.. so the different cultures could also participate.
I think here low quality, sliced cheese is not so close to cheddar for example..
Then again there is the question whether or not to include it at all, especially with American food standards :D
(According to U.S. Government standards, only 51 percent of the final weight needs to be cheese)
This is a great starter list! When you’ve completed it, try the World Cheese Index list. Its up to almost 200 types of cheeses.

Perhaps add: Parmesan, Danish Blue, Chevres, Roquefort, Mozarella, Edam, Guyere, Gorgonzola and Havarti…
…get this list going, to help me decide my plan of attack to
try ten different cheeses.
